¼ of a watermelon, cut into small cubes
¼ cup of torn mint, stems removed
¼ cup of black dried olives or kalamata olives
¼ cup of soft Danish feta
½ cup of pomegranate seeds
1 tbsp of lemon juice (or to taste)
1 tbsp of extra virgin olive oil
1 tbsp of pomegranate molasses (optional)
Description
Combine the watermelon, mint, olives, feta and pomegranate seeds in a salad bowl. Stir gently to combine.
Add the olive oil and lemon juice to the salad and softly combine.
Serve and enjoy!
