Beetroot Brownie recipe

Bernadette from Goodie Goodie Lunchbox shares her delicious 'Better for you' Beetroot Brownie recipe.

Ingredients

Makes 32 brownie bites
(16 larger slices)  
  • Approx 150g (3 small) fresh beetroot (Peeled, cooked and cooled)
  • 1/2 cup low/mild flavoured extra virgin olive oil
  • 1/2 cup maple syrup (not maple syrup flavoured)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup cocoa
  • 1 + ¼ cup wholemeal flour
  • 1/4 tsp baking powder
  • 1/3 cup dark chocolate chips 

Method

1. Preheat your oven to 175c and grease and line a 27.5cm x 17.5cm x 3.5cm slice pan

2. In a blender or with an immersion stick blender blend the beetroot, olive oil, maple syrup to form a smooth paste

3. Transfer the beetroot mixture to a medium sized bowl, whisk the beetroot paste with eggs, vanilla and cocoa until well combined

4. Stir through the flour and baking powder until just combined

5. Stir in the chocolate chips until combined

6. Spread into the prepared slice pan and bake for around 15 minutes or until the brownie is just cooked through and the top bounces back when lightly touched and a skewer inserted comes out mostly clean

7. Allow to cool in the pan before removing and cutting into portions.
