Preheat oven to 160 degrees.
Line a large baking tray with baking paper.
Combine all dry ingredients in a large mixing bowl until they are distributed evenly.
Add the oil and maple syrup to the dry ingredients and mix thoroughly.
Line a flat oven tray with baking paper and spread the mixture evenly onto the tray. If you have excess granola, use two trays.
Tip: Add extra maple syrup or extra virgin olive oil if needed. Use any combination of dried nuts and fruits.
