Warm up your winter mornings with this vanilla spiced porridge with naturally sweet berry chia jam.

Berry chia jam
Spiced vanilla porridge
Heat the strawberries and blueberries in a small saucepan until soft, this should take around 10 minutes. Lightly mash the berries with a fork then mix through the lemon juice, chia seeds and maple syrup. Set aside to cool. The jam will thicken as it cools.
Combine all porridge ingredients in a medium saucepan. Heat over a medium-high temperature, stirring regularly for 3-5 minutes until creamy.
Divide the porridge between bowls and top with a generous dollop of chia jam. Garnish with chopped almonds, fresh berries, edible flowers and a drizzle of maple syrup. Enjoy!
Note: Leftover chia jam will last up to 5 days in an airtight container or jar in the fridge.
