2. Vegan mayo
Blend avocado, white vinegar, lemon juice and salt with some garlic and onion powder for an easy, yummy mayonnaise.
3. Pudding
Freeze avocado overnight then puree with frozen banana, milk (regular or dairy-free), vanilla extract and a pinch of raw cacao. Eat immediately or refrigerate for an after-dinner treat.

Blend with cashews, dates, banana or blueberries, spinach and coconut milk for a creamy drink that packs a nutrient punch.
5. Crispy fries
Slice into wedges and squeeze on some fresh lime. Season with salt and pepper then dip in flour, egg and breadcrumbs. Drizzle well with oil and bake at 200°C on a greased tray until gold and crispy.
6. Salad dressing
Combine with garlic, lemon, apple cider vinegar, water, Dijon mustard and some salt for a creamy dressing. Add a touch of nutritional yeast for a ‘cheesy’ flavour.
